WThis is a simplified take on a beverage found on a new menu. This is a party-sized prepared mix which is packed with tastes associated with Christmas time, which makes it ideal for your festive gathering. Reserve the remaining syrup for brunch beverages, sweets, or for additional servings of bikinis.
Bikini Recipe
Serves 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Drink (yields 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Method
For the Syrup: Place all the items in a pot, heat until it reaches a simmer, mixing until the sugar dissolves. After that, turn off the heat and let it to cool down completely. Pour into an clean bottle, seal and store chilled, it will last for around one month.
Preparing the Premix: Pour the specified spirits and syrup into one large bottle, leave to sit for one hour, then filter it best through cheesecloth, so it's fully clarified.
To serve: Add 85ml of your cocktail base into a stirring glass packed with ice, and stir carefully for a minute to chill. Pour into a cold coupe glass or equivalent, garnish with a few cranberries and finish by giving it a light spray with the mandarin essence over the drink.
